Directions

1. Place the cauliflower rice in a medium pot. Add vegetable stock and bring to boil.
2. Cook until the cauliflower is soft.
3. Drain the remaining liquid up to 1/2 cup.
4. Put the cauliflower, cream cheese, sour cream and butter into the mixing bowl and mash or blend.
5. Add water to change consistency if necessary. Season with salt and pepper.
