Directions

1. Cut aubergine into chunks and slice onion.
2. Fry the onion in a fry pan with a little coconut oil.
3. Microwave the aubergine while you fry the onion.
4. Fry off the curry, add the flour and cook for 1 minute
5. Add the coconut milk then the cooked aubergine.
6. Adjust the seasoning.
7. Note: try adding chicken.
