1 tbsp extra virgin olive oil
60 ml fresh lemon juice
1/4 cup crumbled feta cheese
1 dash pepper
1 dash salt
450 g can, drained chickpeas, rinsed
2 1/2 tbsps fresh mint, chopped
3 <span class="measurestring" title="strip (10 cm long)">strips</span> celery, diced
3 cloves garlic, pressed
1 head romaine lettuce, chopped
2/3 cup scallion, minced
3 tbsps fresh parsley, chopped
1 medium tomato, seeds removed chopped
Mix all ingredients except lettuce and cheese in a bowl and season with salt and pepper to taste.
Serve on bed of chopped romaine lettuce and sprinkle with feta cheese
