Brown Rice Salad
A tasty rice salad full of sweet and sour flavours.
1/2 cup balsamic vinaigrette dressing
4 tsps sugar
1 cup dry brown rice
1/4 cup dried cranberries
1/2 cup celery, diced
1/4 cup red onion, diced
2 <span class="measurestring" title="cup (240 ml)">cups</span> water
In a saucepan, bring water to a boil.
Stir in rice, cover, and reduce heat to low. Simmer for 45 to 60 minutes, or until done.
Transfer rice to a serving bowl, and stir in onion, celery, cranberries, and salad dressing.
Cover, refrigerate, and serve cold.
